Description

Delicious and crispy bites made from leftover mashed potatoes, perfect as an appetizer or side dish.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • Oil spray for frying

Instructions

  1. Combine mashed potatoes, shredded cheese, and egg in a mixing bowl. Season with salt and pepper.
  2. Form small portions of the mixture into golf ball-sized balls.
  3. Coat each ball in a mixture of breadcrumbs and Parmesan cheese.
  4. Preheat the air fryer at 375°F (190°C).
  5. Spray the potato balls with oil and place them in a single layer in the air fryer basket.
  6. Cook for 10-12 minutes, checking for doneness at the 10-minute mark.
  7. Serve warm with your favorite dipping sauce.

Notes

Use different cheese for added flavor and consider adding herbs or cooked bacon bits to the potato mixture.
