Delicious and crispy bites made from leftover mashed potatoes, perfect as an appetizer or side dish.
Ingredients

- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- Oil spray for frying
Instructions
- Combine mashed potatoes, shredded cheese, and egg in a mixing bowl. Season with salt and pepper.
- Form small portions of the mixture into golf ball-sized balls.
- Coat each ball in a mixture of breadcrumbs and Parmesan cheese.
- Preheat the air fryer at 375°F (190°C).
- Spray the potato balls with oil and place them in a single layer in the air fryer basket.
- Cook for 10-12 minutes, checking for doneness at the 10-minute mark.
- Serve warm with your favorite dipping sauce.
Notes
Use different cheese for added flavor and consider adding herbs or cooked bacon bits to the potato mixture.
