Ingredients
1 cup almond flour
1/2 cup powdered sugar
4 large egg whites
1/2 cup granulated sugar
1 tsp vanilla extract
1 cup heavy cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
Instructions
1. Preheat oven to 325°F (160°C).
2. Line baking sheet with parchment paper.
3. Mix almond flour and powdered sugar.
4. Whip egg whites until frothy, gradually adding sugar until glossy peaks form.
5. Fold in almond mixture gently.
6. Pipe 2-inch rounds and bake 20–25 minutes.
7. Cool completely.
8. Whip cream, vanilla, and sugar until fluffy.
9. Pipe filling between cookies and dust with powdered sugar.
Notes
Store in airtight container for up to 3 days.
Unfilled cookies can be frozen for 1 month.
For a twist, add lemon zest or drizzle with dark chocolate.
