Ingredients

  • 2 lbs beef (chuck roast or short rib)
  • 3 cups beef broth
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro (for garnish)
  • Chopped onion (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Soak the chiles in hot water for about 15 minutes.
  2. Make the sauce by blending soaked chiles, garlic, onion, cumin, oregano, and beef broth until smooth.
  3. Cook the beef with the blended sauce, remaining broth, salt, and pepper over low heat for 2 to 3 hours.
  4. Shred the cooked beef into bite-sized pieces.
  5. Prepare the corn tortillas on a skillet over medium heat.
  6. Fill each tortilla with shredded beef and garnish with cilantro, diced onions, and lime wedges.

Notes

For a richer flavor, marinate the meat in the sauce for a few hours or overnight. Serve with consommé for dipping.
