- 2 lbs beef (chuck roast or short rib)
- 3 cups beef broth
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 4 cloves garlic
- 1 onion, chopped
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Corn tortillas
- Chopped cilantro (for garnish)
- Chopped onion (for garnish)
- Lime wedges (for serving)
Instructions
- Soak the chiles in hot water for about 15 minutes.
- Make the sauce by blending soaked chiles, garlic, onion, cumin, oregano, and beef broth until smooth.
- Cook the beef with the blended sauce, remaining broth, salt, and pepper over low heat for 2 to 3 hours.
- Shred the cooked beef into bite-sized pieces.
- Prepare the corn tortillas on a skillet over medium heat.
- Fill each tortilla with shredded beef and garnish with cilantro, diced onions, and lime wedges.
Notes
For a richer flavor, marinate the meat in the sauce for a few hours or overnight. Serve with consommé for dipping.
