Description
A crisp and refreshing autumn salad featuring Honeycrisp apples, feta, toasted nuts, and a light honey-cider dressing.
Ingredients
4 cups mixed greens
2 Honeycrisp apples, thinly sliced
1/2 cup crumbled feta
1/3 cup toasted walnuts or pecans
3 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp honey
1 tsp Dijon mustard
Salt & pepper to taste
Instructions
1. Wash and dry the greens.
2. Thinly slice the Honeycrisp apples.
3. Place greens in a large bowl and layer apples on top.
4. Sprinkle with crumbled feta and toasted nuts.
5. Whisk together olive oil, vinegar, honey, mustard, salt, and pepper.
6. Drizzle dressing over salad.
7. Toss gently before serving.
Notes
To prevent apple browning, toss slices with a little lemon juice.
Swap feta with goat cheese for a softer tang.
Store leftovers undressed for best freshness.
