A healthier twist on a classic appetizer, these Avocado Deviled Eggs replace mayonnaise with creamy avocado for a rich and nutritious filling.

- 6 large eggs
- 1 ripe avocado
- 1 tablespoon lime juice
- 1 teaspoon Dijon mustard
- Salt, to taste
- Pepper, to taste
- 1 tablespoon chopped fresh cilantro (or parsley), for garnish
- Optional: sliced radishes or paprika for garnish
Instructions
- Boil the eggs in a large saucepan covered with water, about an inch above the eggs, on medium-high heat until gentle boiling.
- Cook for 12 minutes off the heat with the pot covered.
- Cool the eggs in a bowl of ice water for at least 5 minutes.
- Peel the eggs under running water to ease shell removal.
- Prepare the filling by cutting the eggs in half lengthwise and placing the yolks in a mixing bowl.
- Mash the avocado with egg yolks, lime juice, Dijon mustard, salt, and pepper until smooth.
- Fill the egg whites with the avocado mixture using a spoon or piping bag.
- Garnish with cilantro or parsley and add optional radish slices or paprika.
Notes
For best flavor, fill egg whites just before serving. Store in an airtight container in the refrigerator for up to 2 days.
