Ingredients
4 cod fillets
1 cup coconut cream
1 tbsp lemon juice
1 tsp lemon zest
2 garlic cloves, minced
2 tbsp olive oil
½ tsp paprika
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. Pat cod fillets dry and season with salt, pepper, and paprika.
3. In a skillet, sauté garlic in olive oil for 1 minute.
4. Stir in coconut cream, lemon juice, and zest; simmer 3 minutes.
5. Pour sauce over cod in baking dish.
6. Bake for 15–18 minutes until fish flakes easily.
7. Garnish with parsley and serve warm.
Notes
You can substitute cod with haddock or tilapia.
