Ingredients
3–4 ripe bananas, mashed
2 cups all-purpose flour
3/4 cup sugar
1/2 cup oil or melted butter
2 large eggs
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
Optional: 1 cup nuts or chocolate chips
Instructions
1. Preheat oven to 350°F (175°C).
2. Grease or line a 9×5 loaf pan.
3. Mash bananas in a bowl until smooth.
4. Whisk eggs, sugar, and oil together.
5. Add mashed bananas and vanilla.
6. Mix in flour, baking soda, salt, and cinnamon.
7. Fold in nuts or chocolate chips if using.
8. Pour batter into loaf pan.
9. Bake 50–60 minutes until toothpick comes out clean.
10. Cool in pan 10 minutes, then transfer to rack.
Notes
Store at room temperature for up to 3 days or refrigerate up to 1 week.
Freeze individual slices for up to 2 months.
