Description

Delightful and moist banana bread made with overripe bananas and walnuts, perfect for any time of the day.


Ingredients

  • 1/2 cup unsalted butter (melted)
  • 1 cup white granulated sugar
  • 2 eggs (room temperature)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 4 medium bananas
  • 1 cup chopped walnuts
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a bread baking dish with butter or cooking spray.
  3. Mash the bananas in a large mixing bowl using a fork.
  4. Mix in the eggs, sugar, melted butter, and vanilla until smooth.
  5. Combine the dry ingredients in a separate bowl: flour, baking soda, salt, and cinnamon.
  6. Mix the dry ingredients into the banana mixture until just combined.
  7. Fold in the chopped walnuts.
  8. Transfer the batter to the prepared baking dish.
  9. Bake for 55-60 minutes or until a toothpick comes out clean.
  10. Cool the bread for 10-15 minutes in the dish, then transfer to a wire rack.
  11. Slice and enjoy warm or at room temperature.

Notes

Use very ripe bananas for the best flavor. Do not overmix to avoid a dense loaf.
