Description

Delightful and healthy banana oat muffins that are perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/3 cup honey or maple syrup
  • 1/2 cup milk
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 large egg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tin with paper liners or grease lightly.
  3. Mash the bananas in a mixing bowl until smooth.
  4. Mix the rolled oats, flour, honey or maple syrup, milk, baking soda, baking powder, cinnamon, salt, and the egg into the mashed bananas until combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 15-20 minutes, checking with a toothpick for doneness.
  7. Cool the muffins for a few minutes before transferring to a wire rack.

Notes

For a sweeter muffin, add more honey or maple syrup. You can also include mix-ins like chocolate chips or nuts.
