Delightful and healthy banana oat muffins that are perfect for breakfast or a snack.
Ingredients

- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup flour
- 1/3 cup honey or maple syrup
- 1/2 cup milk
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 large egg
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your muffin tin with paper liners or grease lightly.
- Mash the bananas in a mixing bowl until smooth.
- Mix the rolled oats, flour, honey or maple syrup, milk, baking soda, baking powder, cinnamon, salt, and the egg into the mashed bananas until combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 15-20 minutes, checking with a toothpick for doneness.
- Cool the muffins for a few minutes before transferring to a wire rack.
Notes
For a sweeter muffin, add more honey or maple syrup. You can also include mix-ins like chocolate chips or nuts.
