Description

Savory beef and melted cheese wrapped in crispy tortillas, perfect for casual family dinners or gatherings.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onion
  • 1/2 cup refried beans
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Oil for frying

Instructions

  1. Cook the ground beef in a skillet over medium heat for 5-7 minutes, breaking it into smaller pieces until browned.
  2. Sauté the diced onion until soft and translucent, about 3-4 minutes.
  3. Season the mixture with garlic powder, cumin, salt, and pepper. Cook for another 2-3 minutes.
  4. Add the refried beans and shredded cheese, mixing well until combined.
  5. Assemble the chimichangas by placing the mixture in tortillas and folding them tightly.
  6. Heat oil in a deep frying pan over medium heat.
  7. Fry the chimichangas seam-side down until golden brown, about 3-4 minutes per side.
  8. Drain on paper towels to remove excess oil.
  9. Serve hot with your favorite toppings.

Notes

For a healthier option, consider baking the chimichangas instead of frying them.
