Ingredients

4 medium beets, roasted and sliced

1/2 cup feta cheese, crumbled

2 cups mixed greens

1/4 cup walnuts, chopped

2 tbsp olive oil

1 tbsp lemon juice

1 tsp honey

Salt and pepper to taste


Instructions

1. Preheat oven to 400°F (200°C).

2. Wrap beets in foil and roast for 35–40 minutes until tender.

3. Cool, peel, and slice the beets.

4. Whisk olive oil, lemon juice, honey, salt, and pepper for the dressing.

5. Arrange greens on a plate, top with beets, feta, and nuts.

6. Drizzle with dressing and serve immediately.

Notes

For a vegan option, replace feta with plant-based cheese.
