- 2 1/4 cups all-purpose flour
- 3/4 cup granulated sugar (plus 2 tablespoons for topping)
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups blueberries (fresh or frozen)
- 1/4 cup packed brown sugar (for streusel)
- 1/4 cup unsalted butter (cold, cut into small pieces for streusel)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare a 12-cup muffin tin with liners or grease.
- Make the streusel topping by mixing flour with brown sugar and cutting in the cold butter.
- Combine the dry ingredients in a large mixing bowl.
- Mix the wet ingredients in a medium bowl.
- Combine the wet and dry ingredients, mixing gently.
- Fold in the blueberries.
- Fill muffin cups about two-thirds full.
- Add streusel topping and reserved sugar on top.
- Bake for 5 minutes at 400°F, then reduce heat to 375°F and bake for 15-18 minutes.
- Cool the muffins in the tin for 5 minutes before transferring to a wire rack.
Notes
Avoid overmixing for fluffiest results. Can substitute other berries or add nuts.
