Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar (plus 2 tablespoons for topping)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups blueberries (fresh or frozen)
  • 1/4 cup packed brown sugar (for streusel)
  • 1/4 cup unsalted butter (cold, cut into small pieces for streusel)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a 12-cup muffin tin with liners or grease.
  3. Make the streusel topping by mixing flour with brown sugar and cutting in the cold butter.
  4. Combine the dry ingredients in a large mixing bowl.
  5. Mix the wet ingredients in a medium bowl.
  6. Combine the wet and dry ingredients, mixing gently.
  7. Fold in the blueberries.
  8. Fill muffin cups about two-thirds full.
  9. Add streusel topping and reserved sugar on top.
  10. Bake for 5 minutes at 400°F, then reduce heat to 375°F and bake for 15-18 minutes.
  11. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

Avoid overmixing for fluffiest results. Can substitute other berries or add nuts.
