Description

Fluffy blueberry muffins with a sprinkle of crunchy streusel topping, perfect for breakfast or a snack.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar (plus 2 tablespoons for topping)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups blueberries (fresh or frozen)
  • 1/4 cup packed brown sugar (for streusel)
  • 1/4 cup unsalted butter (cold, cut into small pieces for streusel)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a 12-cup muffin tin with paper liners or greasing.
  3. Make the streusel topping by combining 1/2 cup flour with brown sugar, then cutting in cold butter.
  4. Mix the dry ingredients in a large bowl: 1 3/4 cups flour, sugar, baking powder, and salt.
  5. Combine the wet ingredients: whisk melted butter, eggs, milk, and vanilla in a medium bowl.
  6. Pour the wet mixture into the dry ingredients and mix gently.
  7. Add the blueberries and fold them into the batter gently.
  8. Fill each muffin cup about two-thirds full with the batter.
  9. Sprinkle the streusel and extra sugar on top of each muffin.
  10. Bake at 400°F for 5 minutes, then reduce heat to 375°F and bake for 15-18 minutes until golden brown.
  11. Cool the muffins in the pan for 5 minutes, then transfer to a wire rack.

Notes

Use fresh blueberries for best flavor. Experiment with different fruits for variations!
