- 2 1/4 cups all-purpose flour
- 3/4 cup granulated sugar (plus 2 tablespoons for topping)
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups blueberries (fresh or frozen)
- 1/4 cup packed brown sugar (for streusel)
- 1/4 cup unsalted butter (cold, cut into small pieces for streusel)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare a 12-cup muffin tin with paper liners or greasing.
- Make the streusel topping by combining 1/2 cup flour with brown sugar, then cutting in cold butter.
- Mix the dry ingredients in a large bowl: 1 3/4 cups flour, sugar, baking powder, and salt.
- Combine the wet ingredients: whisk melted butter, eggs, milk, and vanilla in a medium bowl.
- Pour the wet mixture into the dry ingredients and mix gently.
- Add the blueberries and fold them into the batter gently.
- Fill each muffin cup about two-thirds full with the batter.
- Sprinkle the streusel and extra sugar on top of each muffin.
- Bake at 400°F for 5 minutes, then reduce heat to 375°F and bake for 15-18 minutes until golden brown.
- Cool the muffins in the pan for 5 minutes, then transfer to a wire rack.
Notes
Use fresh blueberries for best flavor. Experiment with different fruits for variations!
