This Best Ever Beef Stew is rich, hearty, and packed with tender beef and vegetables simmered to perfection. Perfect for cozy dinners!
Ingredients
2 lbs beef chuck, cut into cubes
2 tbsp olive oil
1 large onion, chopped
3 carrots, sliced
3 potatoes, cubed
2 tbsp tomato paste
4 cups beef broth or vegetable stock
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
2 bay leaves
1 tsp fresh thyme
Instructions
1. Pat beef dry and season with salt and pepper.
2. Brown the beef in olive oil until golden.
3. Add onions, carrots, and garlic; sauté until fragrant.
4. Stir in tomato paste and deglaze with a bit of broth.
5. Add remaining ingredients and simmer 2–2½ hours.
6. Remove bay leaves, rest 10 minutes, and serve warm.
Notes
For extra depth, brown the beef in batches.
