4 cups vegetable broth

1 bay leaf


Instructions

1. Rinse and soak the black eyed peas overnight.

2. In a pot, heat olive oil over medium heat.

3. Sauté onion, garlic, bell pepper, and celery until fragrant.

4. Add peas, paprika, salt, and bay leaf.

5. Pour in vegetable broth, bring to a boil, then simmer 45–60 minutes.

6. Remove bay leaf and serve warm.

Notes

For a spicier kick, add cayenne or jalapeños.
