Fluffy Blueberry Lemon Pancake Bites a quick, fruity twist on classic pancakes, perfect for breakfast or snacking!
Ingredients
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
3/4 cup milk
1 egg
2 tbsp melted butter
1 tbsp lemon zest
1/2 cup blueberries
Instructions
1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
2. Whisk dry ingredients together in a bowl.
3. In a separate bowl, whisk wet ingredients.
4. Combine both and fold in lemon zest and blueberries.
5. Spoon batter into the tin, filling 3/4 full.
6. Bake for 10–12 minutes until golden and springy.
7. Cool slightly before serving.
Notes
You can replace blueberries with raspberries or chocolate chips.
For dairy-free, use almond milk and vegan butter.
