Description
Soft cookies filled with creamy vanilla custard and topped with rich chocolate ganache a fun, mini take on the classic Boston Cream Pie.
Ingredients
1 cup unsalted butter, softened
1 cup sugar
2 eggs
2 tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking powder
¼ tsp salt
1 cup milk
2 tbsp cornstarch
¼ cup sugar
1 egg yolk
1 cup chocolate chips
½ cup heavy cream
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
2. Cream butter and sugar until light.
3. Add eggs and vanilla; mix well.
4. Combine dry ingredients and add to wet mix.
5. Form dough balls and flatten slightly.
6. Bake 10–12 minutes, then cool completely.
7. Prepare cream filling: whisk milk, sugar, cornstarch, and egg yolk over low heat until thick.
8. Add vanilla and cool.
9. Pipe filling between cookies.
10. Prepare ganache by melting chocolate with warm cream.
11. Dip cookie tops into ganache and chill until set.
Notes
Chill dough for 10 minutes to prevent spreading.
Use a piping bag for neat filling.
Store in fridge for up to 3 days.
