Ingredients

  • 12 ounces Pasta of your choice (e.g., penne or fettuccine)
  • 1 pound Chicken breast, boneless and skinless, cut into bite-sized pieces
  • 4 tablespoons Butter (unsalted recommended)
  • 4 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 cup Heavy cream (or coconut milk)
  • 1 cup Chicken broth (low-sodium preferred)
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente, then reserve 1 cup of pasta water, drain, and set aside.
  2. Sauté Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken pieces, season with salt and pepper, and cook for 6-8 minutes until golden brown. Remove and set aside.
  3. Create the Sauce: In the same skillet, add 2 tablespoons of butter, minced garlic, and diced onion. Sauté for 3-4 minutes until the onions are translucent.
  4. Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring to mix. Add Italian seasoning and red pepper flakes, letting the sauce simmer for 5 minutes.
  5. Combine Pasta and Chicken: Return chicken to the skillet with the drained pasta, tossing to coat evenly. Cook for another 2 minutes to meld flavors.
  6. Serve: Sprinkle grated Parmesan cheese over the top and garnish with fresh parsley. Serve warm and enjoy!

Notes

For a vegetarian option, substitute chicken with sautéed mushrooms or other vegetables. Adjust spice levels by using more or less red pepper flakes.
