Ingredients
2 tbsp olive oil
1 onion, chopped
1 green bell pepper, diced
2 celery stalks, diced
3 garlic cloves, minced
4 cups diced potatoes
1 tsp smoked paprika
2 tsp Cajun seasoning
1/2 tsp dried thyme
4 cups vegetable broth
1 cup heavy cream or coconut milk
Salt and pepper to taste
Instructions
1. Sauté onion, celery, and bell pepper in olive oil for 5 minutes.
2. Add garlic, paprika, thyme, and Cajun seasoning; stir for 30 seconds.
3. Add potatoes and vegetable broth; simmer 20 minutes until tender.
4. Blend part of the soup until creamy.
5. Stir in cream or coconut milk; simmer 5 more minutes.
6. Adjust seasoning, garnish, and serve hot.
Notes
For dairy-free, use coconut milk instead of cream.
Add corn or spinach for more texture.
Store leftovers up to 4 days in the fridge.
