Delicious and healthy Cashew Butter Cups made with dark chocolate and creamy cashew butter, perfect for a sweet snack or dessert.

- 1 1/2 cups dairy-free dark chocolate chips
- 1 Tbsp coconut oil
- 1/2 cup creamy cashew butter (unsweetened)
- 2 Tbsp maple syrup
- 1 Tbsp coconut flour
- 1/2 tsp vanilla extract
- 1 pinch sea salt
Instructions
- Prepare the muffin tin by lining it with 12 paper liners.
- Melt the chocolate by combining dark chocolate chips and coconut oil in a microwave-safe bowl and microwaving in 30-second intervals.
- Create the chocolate base by spooning 1 to 2 teaspoons of melted chocolate into each liner.
- Make the cashew butter filling by mixing together cashew butter, maple syrup, vanilla extract, sea salt, and coconut flour.
- Add the filling by placing about 1 teaspoon of the cashew butter mixture into the center of each chocolate base.
- Top with more chocolate by spooning the remaining melted chocolate over the cashew centers.
- Final setting time in the freezer for 15 to 20 minutes.
- Serve chilled for the best flavor and texture.
