Description

Cheesy Baja Chicken & Bell Pepper Skillet is a quick, colorful one-pan meal packed with bold spices, juicy chicken, and melty cheese.


Ingredients

4 boneless skinless chicken thighs

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

1 tbsp olive oil

1 tsp chili powder

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp cumin

Salt and black pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Juice of 1 lime


Instructions

1. Pat chicken dry and season with Baja spice blend.

2. Heat olive oil in skillet over medium-high heat.

3. Sear chicken thighs for 5–6 minutes per side until golden.

4. Remove chicken and set aside.

5. Sauté peppers and onion until tender.

6. Return chicken to skillet and sprinkle cheese on top.

7. Cover and cook until cheese melts.

8. Rest chicken for 3 minutes before serving.

Notes

You can substitute chicken breast for thighs if preferred.

Add jalapeños for a spicier version.

Serve with rice, salad, or tortillas for a complete meal.
