2 cups cooked grits

1 cup sharp cheddar cheese, shredded

2 tablespoons butter

½ teaspoon salt

¼ teaspoon black pepper

½ cup all-purpose flour

2 eggs, beaten

1 cup breadcrumbs (regular or panko)

½ cup oil, for frying


Instructions

  • Cook the grits – Prepare grits according to package directions until thick and creamy.

  • Add flavor – Stir in butter, shredded cheddar cheese, salt, and black pepper until smooth.

  • Chill the mixture – Spread the cooked grits into a greased dish (about 1-inch thick) and refrigerate for at least 2 hours, or until firm.

  • Cut into cakes – Once chilled, cut the grits into squares, rounds, or triangles.

  • Prepare coating – Dredge each cake lightly in flour, dip in beaten eggs, and coat with breadcrumbs.

  • Heat oil – In a skillet, heat oil over medium-high heat until hot (about 350°F / 175°C).

  • Fry the cakes – Place coated grit cakes in the hot oil and fry 2–3 minutes per side, until golden brown and crispy.

Drain & serve – Transfer to a paper towel–lined plate to remove excess oil. Serve warm with your favorite dips, sauces, or toppings.

Notes

For best results, chill the grits until firm before cutting into cakes. Use panko breadcrumbs for extra crunch, and reheat in the oven to keep them crispy.
