Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 packet (about 1 oz) taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup riced cauliflower
  • Salt to taste
  • Pepper to taste
  • Optional garnishes: sour cream, avocado, cilantro

Instructions

  1. Brown the meat in a large pot over medium heat for about 5-7 minutes until browned.
  2. Cook the diced onion and minced garlic for 3-4 minutes until tender and translucent.
  3. Combine the diced tomatoes, beef broth, taco seasoning, and riced cauliflower; bring to a simmer.
  4. Simmer gently on low heat for 15-20 minutes, stirring occasionally.
  5. Add the heavy cream and shredded cheddar cheese, mixing until the cheese melts.
  6. Season to taste with salt and pepper.
  7. Serve in bowls with garnishes of your choice.

Notes
