Ingredients

- 1 lb ground beef (or ground turkey/chicken)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups beef broth
- 1 packet (about 1 oz) taco seasoning
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup riced cauliflower
- Salt to taste
- Pepper to taste
- Optional garnishes: sour cream, avocado, cilantro
Instructions
- Brown the meat in a large pot over medium heat for about 5-7 minutes until browned.
- Cook the diced onion and minced garlic for 3-4 minutes until tender and translucent.
- Combine the diced tomatoes, beef broth, taco seasoning, and riced cauliflower; bring to a simmer.
- Simmer gently on low heat for 15-20 minutes, stirring occasionally.
- Add the heavy cream and shredded cheddar cheese, mixing until the cheese melts.
- Season to taste with salt and pepper.
- Serve in bowls with garnishes of your choice.
