Description

A hearty and creamy casserole with chicken, broccoli, and a rich sauce topped with melted cheese – perfect for family dinners and potlucks.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup grated cheddar cheese
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cream of mushroom soup, mayonnaise, chicken broth, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Prepare a baking dish by greasing it with cooking spray or butter.
  4. Layer the steamed broccoli florets evenly on the bottom of the dish, followed by the shredded chicken.
  5. Add the prepared cream mixture over the chicken and broccoli.
  6. Top with grated cheddar cheese and optionally sprinkle breadcrumbs on top.
  7. Bake in the preheated oven for 30-35 minutes until bubbling and golden.
  8. Cool for a few minutes before serving.

Notes

For a lighter version, substitute the cream of mushroom soup with a low-fat or homemade version and use Greek yogurt instead of mayonnaise.
