Instructions
- Prepare the Marinade: In a large bowl, combine minced garlic, ground cumin, paprika, turmeric, cinnamon, plain yogurt, olive oil, salt, and pepper. Mix until smooth.
- Marinate the Chicken: Add chicken thighs to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
- Preheat Your Grill or Skillet: Preheat your grill or skillet over medium-high heat. Lightly oil the grates if using a grill.
- Cook the Chicken: Place marinated chicken thighs on the grill or skillet, cooking for 6-7 minutes on each side until cooked through and charred.
- Rest and Slice: Let the chicken rest for a few minutes, then slice into thin strips.
- Serve: Fill warm pita bread with sliced shawarma chicken and garnish with lettuce, tomatoes, cucumbers, and extra garlic sauce if desired.
Notes
For juicier shawarma, consider using bone-in chicken thighs. Marinating overnight enhances the flavor. Make extra garlic sauce for drizzling.
