Delicious cups combining dark chocolate and creamy peanut butter with a satisfying crunch, perfect for snacks or dessert.


Ingredients

  • 1 1/2 cups dark chocolate chips
  • 1 Tbsp coconut oil
  • 1/2 cup creamy natural peanut butter
  • 1 cup puffed quinoa, brown rice crisps, or finely chopped nuts
  • 2 Tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt

Instructions

  1. Melt the dark chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Prepare a mini muffin tin with paper liners.
  3. Add about 1 teaspoon of melted chocolate into each liner.
  4. Mix the peanut butter, maple syrup or honey, vanilla extract, and sea salt in another bowl.
  5. Fold in your crunchy element until well coated.
  6. Fill each chocolate-lined cup with the peanut butter crunch mixture.
  7. Top with remaining melted chocolate to cover the filling.
  8. Set the muffin tin in the freezer for 15-20 minutes until firm.
  9. Enjoy your treats after removing them from the liners.
