- 2 lbs beef stew meat, cut into cubes
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Brown the beef: Start by heating 2 tablespoons of olive oil in a large pot over medium heat. Once the oil is hot, add the beef cubes and brown well on all sides.
- Sauté the vegetables: Remove the beef from the pot and add the chopped onion and minced garlic. Sauté until soft, about 3-5 minutes.
- Add seasonings and tomato paste: Stir in tomato paste, dried thyme, bay leaves, salt, and pepper with the onion and garlic.
- Combine everything: Return browned beef to the pot, pour in beef broth, and add potatoes and carrots. Stir gently to combine.
- Bring to a boil: Increase heat to bring the mixture to a boil. Then reduce heat to low to simmer.
- Simmer the stew: Allow to simmer for 1.5 to 2 hours, stirring occasionally to ensure it simmers gently.
- Adjust seasoning and serve: Taste the stew, adjust seasoning, and remove bay leaves before serving.
Notes
Garnish with fresh parsley and serve with crusty bread or a salad.
