  • 2 lbs beef stew meat, cut into cubes
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Brown the beef: Start by heating 2 tablespoons of olive oil in a large pot over medium heat. Once the oil is hot, add the beef cubes and brown well on all sides.
  2. Sauté the vegetables: Remove the beef from the pot and add the chopped onion and minced garlic. Sauté until soft, about 3-5 minutes.
  3. Add seasonings and tomato paste: Stir in tomato paste, dried thyme, bay leaves, salt, and pepper with the onion and garlic.
  4. Combine everything: Return browned beef to the pot, pour in beef broth, and add potatoes and carrots. Stir gently to combine.
  5. Bring to a boil: Increase heat to bring the mixture to a boil. Then reduce heat to low to simmer.
  6. Simmer the stew: Allow to simmer for 1.5 to 2 hours, stirring occasionally to ensure it simmers gently.
  7. Adjust seasoning and serve: Taste the stew, adjust seasoning, and remove bay leaves before serving.

Notes

Garnish with fresh parsley and serve with crusty bread or a salad.
