Ingredients
1 whole turkey (12-14 lbs)
1/2 cup unsalted butter, softened
2 tbsp olive oil
1 lemon, halved
1 onion, quartered
4 garlic cloves, smashed
Fresh rosemary, thyme, and sage (about 6-8 sprigs each)
Salt and freshly ground black pepper
Instructions
Preheat oven to 325°F (165°C). Remove giblets from turkey, pat dry with paper towels.
Rub the turkey inside and out with olive oil and softened butter. Season generously with salt and pepper.
Stuff the cavity with lemon halves, onion, garlic, and herbs.
Tie the turkey legs together with kitchen twine and tuck the wings under the body.
Place the turkey on a rack in a roasting pan, breast side up.
Roast the turkey, basting every 30 minutes, for 13-15 minutes per pound or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast.
Let the turkey rest for 20-30 minutes before carving.
