  • 1 cup chopped pecans
  • 1/2 cup unsalted butter
  • 8 oz cream cheese
  • 3 cups powdered sugar

Instructions

  1. Prepare the oven and pans by preheating to 350°F (175°C) and greasing three 9-inch round cake pans.
  2. Mix the dry ingredients including flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. Add the wet ingredients: eggs, milk, oil, and vanilla to the dry mix and beat for about 2 minutes.
  4. Incorporate the boiling water into the batter, ensuring it’s well mixed.
  5. Bake the cakes in the preheated oven for 30-35 minutes, checking with a toothpick for doneness.
  6. Make the frosting by melting the butter, adding coconut and pecans, and letting it cool slightly.
  7. Beat the cream cheese with powdered sugar until smooth.
