Instructions
- Prepare the oven and pans by preheating to 350°F (175°C) and greasing three 9-inch round cake pans.
- Mix the dry ingredients including flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Add the wet ingredients: eggs, milk, oil, and vanilla to the dry mix and beat for about 2 minutes.
- Incorporate the boiling water into the batter, ensuring it’s well mixed.
- Bake the cakes in the preheated oven for 30-35 minutes, checking with a toothpick for doneness.
- Make the frosting by melting the butter, adding coconut and pecans, and letting it cool slightly.
- Beat the cream cheese with powdered sugar until smooth.
