- 1 cup (85g) unsweetened cocoa powder
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (227g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup (240ml) buttermilk
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Mix boiling water with cocoa powder until smooth; set aside to cool.
- Whisk together flour, baking powder, baking soda, and salt in a separate bowl.
- Cream the butter and sugar until fluffy, about 3-5 minutes.
- Add eggs one at a time, mixing well after each addition; stir in vanilla extract.
- Mix in buttermilk until fully combined.
- Combine the dry ingredients and cocoa mixture gradually into the butter mixture.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Prepare frosting by mixing coconut and pecans into your choice of creamy frosting.
- Assemble the cake by spreading frosting between the layers and on top of the cake.
