  • 1 cup (85g) unsweetened cocoa powder
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) buttermilk
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Mix boiling water with cocoa powder until smooth; set aside to cool.
  3. Whisk together flour, baking powder, baking soda, and salt in a separate bowl.
  4. Cream the butter and sugar until fluffy, about 3-5 minutes.
  5. Add eggs one at a time, mixing well after each addition; stir in vanilla extract.
  6. Mix in buttermilk until fully combined.
  7. Combine the dry ingredients and cocoa mixture gradually into the butter mixture.
  8. Pour the batter evenly into the prepared cake pans.
  9. Bake for 30-35 minutes until a toothpick comes out clean.
  10. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. Prepare frosting by mixing coconut and pecans into your choice of creamy frosting.
  12. Assemble the cake by spreading frosting between the layers and on top of the cake.
