Fluffy Coffee Pancakes infused with espresso flavor a cozy, energizing breakfast treat ready in minutes!
Ingredients
1 ½ cups all-purpose flour
2 tbsp brown sugar
1 tbsp instant coffee or 2 tbsp brewed espresso
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup milk
1 large egg
2 tbsp melted butter or coconut oil
1 tsp vanilla extract
Instructions
1. Whisk together dry ingredients in a bowl.
2. Mix milk, egg, melted butter, vanilla, and coffee in another bowl.
3. Combine wet and dry ingredients until just mixed.
4. Heat griddle and grease lightly.
5. Pour ¼ cup batter per pancake and cook until bubbles form.
6. Flip and cook until golden on both sides.
7. Serve warm with syrup, fruit, or cream.
Notes
For vegan version: use plant milk and flaxseed egg.
Add cocoa powder for mocha flavor.
Store leftovers in fridge for up to 3 days.
