Description
These Copycat Nutter Butters from Scratch are crispy, creamy, and full of peanut butter goodness. A homemade twist on the nostalgic classic!
Ingredients
1 cup creamy peanut butter
1 cup brown sugar
1/2 cup butter, softened
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
Filling:
1/2 cup creamy peanut butter
1/4 cup butter, softened
1 cup powdered sugar
1–2 tbsp milk
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream butter, peanut butter, and sugars until light and fluffy.
3. Add egg and vanilla; mix well.
4. Stir in flour, baking soda, and salt until dough forms.
5. Roll dough into 1-inch ovals, press with a fork, and bake for 8–10 minutes.
6. Cool completely before filling.
7. Mix filling ingredients until smooth, spread between cookies, and chill before serving.
Notes
You can use almond or cashew butter for variety.
Store cookies in an airtight container for up to 5 days.
Freeze unfilled cookies for up to 2 months.
