A cozy, creamy wild rice soup packed with hearty vegetables and comforting autumn flavors.
Ingredients
1 cup wild rice
2 tablespoons olive oil
1 onion, diced
2 carrots, chopped
2 celery stalks, chopped
1 cup mushrooms, sliced
3 cloves garlic, minced
5 cups vegetable broth
1 cup milk or dairy-free alternative
2 tablespoons flour
1 teaspoon thyme
Salt and pepper to taste
Instructions
1. Rinse wild rice and set aside.
2. Heat olive oil and sauté onion, carrots, celery, and mushrooms for 5 minutes.
3. Add garlic, thyme, and flour; stir well.
4. Pour in broth and add wild rice; simmer for 45 minutes.
5. Stir in milk, season, and cook 5 more minutes.
6. Let rest for 10 minutes before serving.
Notes
Store leftovers in the refrigerator for up to 4 days.
Add extra broth or milk when reheating for best texture.
Freezes well for up to 2 months.
