  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Prepare your ingredients: Peel and dice the potatoes, slice the carrots, dice the celery, chop the onion, and mince the garlic.
  2. Sauté the aromatics: Heat olive oil in a skillet over medium heat, add onion, and sauté for 3-4 minutes until translucent.
  3. Add garlic: Stir in the minced garlic and sauté for another minute until fragrant.
  4. Transfer to the slow cooker: Move the sautéed onion and garlic into the slow cooker.
  5. Add chicken and vegetables: Toss in the chicken thighs, potatoes, carrots, and celery.
  6. Pour in the broth: Carefully pour in the chicken broth and stir to combine.
  7. Season: Sprinkle in thyme, rosemary, salt, and pepper, and add the bay leaf.
  8. Cook: Cover and cook on low for 6-8 hours or high for 4-5 hours.

  10. Thicken the stew (optional): Mix cornstarch with water and stir into the stew during the last moments of cooking.
  11. Final touches: Remove the bay leaf, taste, and adjust seasonings as needed.
