A festive Cranberry Apple Twice-Baked Sweet Potatoes recipe packed with cozy flavors, perfect for holidays or family dinners.
Ingredients
4 medium sweet potatoes
1 cup diced apples (Honeycrisp or Granny Smith)
1/2 cup fresh cranberries (or dried)
2 tbsp butter (or coconut oil for vegan)
2 tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
Pinch of salt
1 tsp olive oil
Instructions
1. Preheat oven to 400°F (200°C).
2. Pierce sweet potatoes, rub with oil, and bake for 45–50 minutes until tender.
3. Cool slightly, cut lengthwise, and scoop out most of the flesh.
4. Mash flesh with butter, maple syrup, cinnamon, nutmeg, and salt.
5. Fold in apples and cranberries.
6. Spoon mixture back into potato skins.
7. Bake an additional 15 minutes until golden and heated through.
Notes
Make-ahead tip: Prepare the filling and refrigerate up to 24 hours. Bake when ready to serve.
Substitution: Use pears or dried cherries if apples or cranberries aren’t available.
