This Cranberry Balsamic Roast Beef combines sweet-tart cranberries with tender, juicy beef in a rich, flavorful glaze perfect for holidays or family dinners.
Ingredients
1 (3 lb) beef chuck roast
1 cup cranberry sauce
1/2 cup balsamic vinegar
2 tbsp olive oil
2 tbsp honey
1 tbsp Dijon mustard
3 cloves garlic, minced
1 tsp salt
1 tsp black pepper
Instructions
1. Preheat oven to 375°F (190°C).
2. Pat beef dry and season with salt and pepper.
3. Sear on all sides until browned.
4. Whisk together cranberry sauce, balsamic vinegar, honey, Dijon, and garlic.
5. Pour sauce over beef, cover, and roast 1–1.5 hours.
6. Rest 10 minutes before slicing and serving with pan juices.
Notes
Marinate beef up to 8 hours for deeper flavor.
Use a thermometer for perfect doneness.
Leftovers reheat well with a splash of broth.
