Instructions
- Combine the rolled oats, dried cranberries, and chopped pistachios in a large mixing bowl.
- Mix the honey (or maple syrup), nut butter, and vanilla extract in a separate bowl until smooth.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Using your hands, take small portions of the mixture and roll them into 1-inch balls.
- Refrigerate the energy bites on a baking sheet for at least 30 minutes.
- Store in an airtight container in the refrigerator for up to a week.
