Ingredients

Instructions

  1. Combine the rolled oats, dried cranberries, and chopped pistachios in a large mixing bowl.
  2. Mix the honey (or maple syrup), nut butter, and vanilla extract in a separate bowl until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until well combined.
  4. Using your hands, take small portions of the mixture and roll them into 1-inch balls.
  5. Refrigerate the energy bites on a baking sheet for at least 30 minutes.
