Ingredients

  • 1/2 cup dried cranberries
  • 1/2 cup pistachios, chopped
  • 1/4 cup honey or maple syrup
  • 1/2 cup nut butter (almond or peanut butter)
  • 1/2 teaspoon vanilla extract
  • Optional: chocolate chips or other dried fruits

Instructions

  1. Gather a large bowl. In this bowl, mix together the rolled oats, dried cranberries, and chopped pistachios.
  2. Combine the honey (or maple syrup), nut butter, and vanilla extract in a separate bowl.
  3. Pour the wet ingredients into the bowl with the dry ingredients and stir until well combined.
  4. Fold in optional chocolate chips or other dried fruits if desired.
  5. Form small balls from the mixture and roll them between your palms.
  6. Place the energy bites on a baking sheet lined with parchment paper and chill in the refrigerator for at least 30 minutes.
