Ingredients
1.5 lbs boneless, skinless chicken thighs or breasts
Salt & pepper, to taste
1 tbsp olive oil
2 tbsp butter
2 cloves garlic, minced
2 cups mushrooms, sliced
2 cups spinach
1 cup chicken broth
1 cup heavy cream
1/2 cup mozzarella cheese
1/4 cup Parmesan cheese
1 tbsp flour
1 tsp Italian seasoning
Instructions
1. Preheat oven to 375°F (190°C).
2. Season and sear chicken until golden.
3. Sauté garlic and mushrooms in butter.
4. Add flour and stir; pour in broth and cream.
5. Add spinach and cook until wilted.
6. Stir in cheeses and mix until creamy.
7. Combine chicken with sauce in casserole dish.
8. Bake 20 minutes, then rest for 5 minutes before serving.
Notes
Use fresh or frozen spinach.
Substitute turkey or rotisserie chicken if preferred.
Store leftovers for up to 3 days in the fridge.
