This Creamy Lemony Tuscan Artichoke Soup is rich, tangy, and comforting. A perfect blend of creamy texture and bright citrus flavor inspired by Tuscany.
Ingredients
2 tbsp olive oil
1 small onion, chopped
3 garlic cloves, minced
1 can artichoke hearts, drained
3 cups vegetable broth
1/2 cup heavy cream or coconut milk
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp fresh thyme
Salt and pepper to taste
Instructions
1. Heat olive oil in a pot over medium heat.
2. Add onions and garlic; cook until fragrant.
3. Add artichokes, broth, thyme, and lemon zest.
4. Simmer for 20 minutes, then blend until smooth.
5. Stir in cream and lemon juice.
6. Season with salt and pepper, and serve warm.
Notes
For a vegan version, use coconut milk instead of cream.
Top with fresh herbs or toasted pine nuts before serving.
