Description
This Creamy Shrimp Scampi With Orzo combines tender shrimp, garlic, and lemon in a rich creamy sauce. Ready in 30 minutes, it’s a one-pan meal perfect for busy nights.
Ingredients
1 lb large shrimp, peeled and deveined
1 cup orzo pasta
2 tbsp butter
1 tbsp olive oil
3 garlic cloves, minced
1 ½ cups chicken or vegetable broth
½ cup heavy cream
¼ cup grated Parmesan cheese
1 tbsp lemon juice
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Pat shrimp dry and season with salt and pepper.
2. Heat olive oil and butter in a large skillet.
3. Cook shrimp 2–3 minutes per side, remove and set aside.
4. In the same skillet, sauté garlic until fragrant.
5. Add orzo and toast 1 minute.
6. Pour in broth, simmer 10 minutes until tender.
7. Stir in cream, Parmesan, and lemon juice.
8. Return shrimp to skillet and toss until creamy.
9. Garnish with parsley and serve warm.
Notes
For a lighter version, use half-and-half or Greek yogurt instead of cream.
Reheat leftovers with a splash of broth to restore creaminess.
