Description

Ingredients
2 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
4 cups crushed tomatoes
1 cup vegetable broth
1/2 cup heavy cream
Fresh basil leaves
Salt and pepper to taste
4 slices sourdough bread
2 tbsp butter
1 cup shredded mozzarella or cheddar
Instructions
1. Heat olive oil and sauté onion until soft.
2. Add garlic, then tomatoes and broth; simmer 15 minutes.
3. Blend until smooth, add cream and basil, season to taste.
4. Butter bread, fill with cheese, grill until golden.
5. Serve soup hot with grilled cheese.
Notes
For vegan option, use coconut cream and plant-based cheese.
Store soup in fridge up to 3 days or freeze for later.
