Description
These Crispy Parmesan Thyme Sweet Potato Stacks are buttery, golden, and packed with flavor perfect as a side or holiday dish.
Ingredients
2 large sweet potatoes, peeled and thinly sliced
2 tbsp melted butter
2 tbsp olive oil
1/3 cup grated Parmesan cheese
1 tsp fresh thyme leaves
1/2 tsp garlic powder
Salt and black pepper to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. Grease a 12-cup muffin tin with butter or oil.
3. Toss sweet potato slices with butter, oil, Parmesan, thyme, garlic powder, salt, and pepper.
4. Layer 6–8 slices in each muffin cup.
5. Sprinkle extra Parmesan on top.
6. Bake for 35–40 minutes until crispy and tender.
7. Cool slightly and serve warm.
Notes
Tip: Use a mandolin slicer for even slices.
Reheat leftovers in an air fryer to keep them crispy.
