Ingredients
6 cups diced russet potatoes
1 cup chopped onion
3 cloves garlic, minced
4 cups vegetable or chicken broth
8 oz cream cheese, cubed
1 ½ cups shredded cheddar cheese
1 tbsp ranch seasoning
½ tsp paprika
1 tsp salt
½ tsp pepper
2 tbsp olive oil
Instructions
1. Spray or grease your Crock Pot lightly.
2. Add diced potatoes, onions, and garlic.
3. Pour in broth, cream cheese, cheddar, and ranch seasoning.
4. Cover and cook on Low for 6–7 hours or High for 3–4 hours.
5. Stir occasionally until potatoes are tender and soup is creamy.
6. Let rest uncovered for 10 minutes before serving.
Notes
For a smoother texture, use an immersion blender before serving.
Store leftovers in the fridge for up to 3 days.
