A refreshing Cucumber Caprese Salad with crisp cucumbers, juicy tomatoes, mozzarella, and fresh basil, drizzled with olive oil and balsamic glaze.
Ingredients
2 medium cucumbers, sliced
1 cup cherry tomatoes, halved
1 cup fresh mozzarella balls
1/4 cup fresh basil leaves
2 tbsp olive oil
1 tbsp balsamic glaze
Salt and pepper to taste
Instructions
1. Slice cucumbers into rounds or half-moons.
2. Halve cherry tomatoes.
3. Pat mozzarella dry and cut if needed.
4. Arrange cucumbers, tomatoes, and mozzarella on a platter.
5. Scatter fresh basil leaves over the top.
6. Drizzle with olive oil and balsamic glaze.
7. Season with salt and pepper.
8. Serve immediately or chill for 15 minutes before serving.
Notes
For extra creaminess, add avocado slices.
For a spicy twist, sprinkle red pepper flakes.
