Ingredients
2 cups cubed butternut squash
200g chicken or turkey sausage, sliced
200g pasta (penne or rigatoni)
2 tbsp olive oil
2 garlic cloves, minced
1/4 cup grated Parmesan or nutritional yeast
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. Toss squash cubes with olive oil, salt, and pepper; roast until tender.
3. Boil pasta until al dente; reserve 1/4 cup of pasta water.
4. Sauté sausage until browned.
5. Add roasted squash and pasta to the skillet.
6. Stir in reserved pasta water and Parmesan.
7. Garnish with parsley and serve warm.
Notes
You can use any type of squash available.
For a vegan option, replace sausage with tofu or plant-based protein.
