A fresh, vibrant bowl featuring juicy grilled steak, Mediterranean herbs, and wholesome grains.
Ingredients
1 lb flank steak
3 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic (minced)
1 tsp oregano
1 tsp paprika
1/2 tsp salt & pepper
1 cup cooked quinoa
1/2 cup cherry tomatoes
1/2 cucumber (sliced)
1/4 cup chopped parsley
Instructions
1. Marinate steak with olive oil, lemon, garlic, and spices.
2. Preheat grill or skillet over medium-high heat.
3. Cook steak 3–4 minutes per side for medium-rare.
4. Let rest for 5 minutes, then slice thinly.
5. Assemble bowl with quinoa, veggies, and sliced steak.
6. Drizzle with extra olive oil and lemon juice.
Notes
Optional: Add feta cheese or tzatziki for a Greek twist.
Store leftovers up to 3 days in the fridge.
