Description

A delicious one-pan meal featuring tender chicken, flavorful rice, and refreshing tzatziki sauce, perfect for busy weeknights.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 1/2 cups long-grain white rice (basmati or jasmine)
  • 2 1/2 cups chicken broth
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large lemon, juiced
  • 1/2 cup tzatziki sauce, for serving
  • Fresh parsley and sliced cucumber, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare a 9×13-inch baking dish by lightly greasing it with olive oil.
  3. Combine the uncooked rice, chicken broth, minced garlic, olive oil, and lemon juice in the baking dish. Add the dried oregano, dried dill, salt, and black pepper and mix well.
  4. Add the chicken pieces, spreading them evenly over the rice mixture and pressing them down into the liquid.
  5. Cover the dish tightly with aluminum foil and bake for 35-40 minutes.
  6. Let the dish rest covered for about 5 minutes after baking.
  7. Fluff the rice with a fork and serve warm with tzatziki sauce on top and garnish with parsley and cucumber if desired.
