- 3 cups Chicken, cooked
- 2 cloves Garlic
- 1/2 tsp Garlic powder
- 1 Potato, medium
- 1/2 tsp Thyme, dried
- 1 Yellow onion, small
- 2 cups Chicken broth
- 1 tbsp Baking powder
- 1/2 tsp Black pepper
- 1 1/3 cup Flour
- 1 1/2 tsp Salt
- 6 tbsp Butter, unsalted
- 1/2 cup Cheddar cheese
- 1 2/3 cup Whole milk
- 2 cups Mixed vegetables, frozen
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the cooked chicken, minced garlic, garlic powder, diced potato, thyme, chopped onion, chicken broth, and mixed vegetables in a large bowl.
- Pour the chicken and vegetable mixture into a greased baking dish.
- Mix the flour, baking powder, salt, black pepper, and cubed unsalted butter in another bowl until crumbly.
- Stir in the whole milk and shredded cheddar cheese gently until just combined.
- Spoon the cobbler batter over the chicken mixture evenly.
- Bake for 25-30 minutes or until the top is golden brown and the filling is bubbling.
- Remove the dish from the oven and let it cool for a few minutes before serving.
Notes
Great for using leftover rotisserie chicken; customize veggies to your preference.
