Ingredients

  • 3 cups Chicken, cooked
  • 2 cloves Garlic
  • 1/2 tsp Garlic powder
  • 1 Potato, medium
  • 1/2 tsp Thyme, dried
  • 1 Yellow onion, small
  • 2 cups Chicken broth
  • 1 tbsp Baking powder
  • 1/2 tsp Black pepper
  • 1 1/3 cup Flour
  • 1 1/2 tsp Salt
  • 6 tbsp Butter, unsalted
  • 1/2 cup Cheddar cheese
  • 1 2/3 cup Whole milk
  • 2 cups Mixed vegetables, frozen

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the cooked chicken, minced garlic, garlic powder, diced potato, thyme, chopped onion, chicken broth, and mixed vegetables in a large bowl.
  3. Pour the chicken and vegetable mixture into a greased baking dish.
  4. Mix the flour, baking powder, salt, black pepper, and cubed unsalted butter in another bowl until crumbly.
  5. Stir in the whole milk and shredded cheddar cheese gently until just combined.
  6. Spoon the cobbler batter over the chicken mixture evenly.
  7. Bake for 25-30 minutes or until the top is golden brown and the filling is bubbling.
  8. Remove the dish from the oven and let it cool for a few minutes before serving.

Notes

Great for using leftover rotisserie chicken; customize veggies to your preference.
