Quick and delicious chicken quesadillas that are easy to make and fully customizable with your favorite add-ins.
Ingredients

- 2 cups cooked chicken, shredded or diced
- 4 large flour tortillas
- 2 cups shredded cheese (Mexican blend, Monterey Jack, or cheddar)
- 1 Tbsp butter or olive oil, for skillet
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- Salt and black pepper, to taste
- Optional add-ins: diced bell peppers, onions, black beans, or corn
Instructions
- Prepare the chicken mixture by placing the cooked chicken in a medium bowl. Add the cumin, chili powder, garlic powder, salt, and pepper, then mix until well coated.
- Heat a large non-stick skillet over medium heat and add butter or olive oil.
- Assemble the quesadilla by placing one tortilla in the skillet, sprinkling cheese on it, and adding half the chicken mixture.
- Cook the first side for about 2 to 3 minutes until the bottom is golden and the cheese begins to melt.
- Flip the quesadilla carefully using a spatula and cook the other side for another 2 minutes until crispy.
- Slice and serve warm with salsa, sour cream, or guacamole.
Notes
Feel free to customize with additional vegetables or switch up the types of cheese used.
